thought you could eat lettuce thinnings...

I thinned my lettuce seedlings today. Most have 6 to 8 leaves and they are very compact and healthy looking. They feel tender to the touch and have never wilted. I just put all the plants i thinned in a bowl. My mother washed them and put dressing on them. She took about 4 bites before she said they were just too bitter to eat! What gives? It was a mix of black seeded simpson red cross speckles buttercrunch and little caeser. Does that mean they are trash even though they loo

r will they sweeten as they mature and after being transplanted out into the cold? Strange because ive harvested baby lettuces in june that tasted fine.
