Initial heavy pruning of collected from wild in zone 6

Hello, I have amassed a dozen or more species hardy in zone 6 by collecting them from my property this fall, and some were nursery bought. This fall they will be planted strait into the ground. Some have quite large branch structure that are annoying to work around, is it okay to reduce these down to the main trunk once the sap has dropped (late november) Due to medical school/out on rotations, I may not make it back home to do any spring pruning, so should I do my initial chops late this fall or even in late december? Some of the species are 6" seedlings, should I put a bushel basket or something over them for winter? thanks, castor crap
