to pinch or not to pinch

My mom was nice and sent me a bunch of seeds for my birthday. I have no experience with plants or seedlings, lol so I decied to plant 150 seedlings thinking that most of them would die under my not so green thumb. To my surprise they have all came up and they are all doing really well. My cosmos and marigolds have buds on them and all of my seedlings range from 6-12 inches. My question is, what do I "pinch back" (I think that is the term)...I want them to flower as much as possible. I have carnations(chabaud), marigolds, dianthus(double gaiety), tobacco, nemophilla(penny black),lavatera(silvercup), alyssum(rosie o'day), cosmos(ladybird), petunia(primetime hybrid), petunia(bonanza double mix hybrid). I am so lost and I have no idea what to do with them now! I know I have to dead head them, but I read somewhere that you have to cut back certain plants...I have searched and searched and I can't find that site anymore. Please help me.
