How to prune after first blooming to keep height under control

My roses are currently a lovely size, but after deadheading almost all of them except Austins, they're starting to grow rapidly. I'd like to keep them bushy and around 4-5 feet in size. How much can I deadhead? I read somewhere that it's safe to remove up to half of the branch—is that correct?
