Eggplant lovers, your most productive eggplant(s)
Comments (35)😊 I only use the eggplant to make Mediterranean dishes ( you probably havn’t heard or seen) one dish is made with roasted eggplant on fire then mashed and sautéed with garlic, turmeric, tomatoes and eggs, has a smoky flavor and aroma to it. ( another dish is with sauted eggplants cooked with lots of garlic, tomatoes, dried mint, turmeric and a dairy product called Kashk. Also eggplant stew with lamb...all are very delicious. I’m more used to cooking with the long skinnier eggplants ( less seeds)....See MoreEggplant harvest - Jumbo two-in-one eggplant?
Comments (1)I've seen that happen several times, definitely not too unusual. Like anything that needs pollinated, the blossom was pollinated twice at the same time. You can also see some more unusual double that have 2 stems instead of 1, which are 2 fruits that grow together. We had a tomato this last week, wish I had taken a pic, that was 4 with only 1 stem. First quadruple I've even seen....See MoreWhat to do with pork roast (apple, fennel, shallot dressing)
Comments (6)Wow....I just looked at that recipe with a critical eye.....that will be a mucky mess...it will be something like an egg strata without the eggs...It will be too soft to pack into a rolled pork roast....if you put in 3 cups of milk! I would only add as much liquid as you need to moisten....and that liquid wouldn't be milk but broth. Teh fruits and vegetables sound wonderful together....but then it goes and adds a lot of bread and milk. I'll bet it would be good baked in a casserole though and served as a side....See MorePork Rib Ragu needs depth of flavor
Comments (13)Wow, thanks for all of the responses. Anchovy paste came to mind as "instant umami" but I am trying to keep my purchase of things like that down right now. We will be moving in a month and a half (so the builder says. I'm dubious) and I want to keep things simple until then. I have tomato paste in a tube, molasses, and Worcestershire sauce on hand. I think I'll start with those and see how it goes. John, I think your advice to cook longer with the lid off may help a lot too. The tomatoes don't seem to have adequately caramelized. They are still redder than I think they ought to be....See More- 3 days ago
