triumph in leftoverland

So, I'm hovering at less than third a tank of gas, and sure as heck don't want to fill up any time soon. So this is what transpired at the dinner table.

Dinner #1.. 4 skinless/boneless chix breasts (dry brined in fridge overnight). With a sauce of onions, red pepper, spinach, mushrooms, white wine, and heavy cream. We only ate two.

Dinner #2..chix breast sandwiches (lettuce, tomato, avocado, mayo.)

Dinner#3.. Added chix stock to leftover spinach/mushroom sauce for a really tasty soup.

All were really good, and got us fed without a trip to the grocery store. I love it when things work out well. Yum.

    We would have done the same, but instead of sandwiches, added one of the chicken breasts and some sauce to pasta, maybe some vegs from fridge or freezer. The other breast would have become chicken salad with lots of crispy veg for lunch.

    DH loves to go to the store on his bike. But his favorite really cheap store is a bit too far to bike. OTOH, the stock is, frankly, of more predictable quality at the closer, slightly more expensive store. It’s all a trade-off.

    I'm feeling smug (sarcasm)....I only spent $71 to fill up tonight (I have to burn hi-test in my car), which is about 50% higher than what it's been, but figure it's about half of what it will be next week. Ugh.

    Your dinner sound yummy! I did also have leftovers, rack of lamb, steamed romanesco and a kale Caesar salad, so no trip to the store necessary.

    My husband is also feeling smug as he too, bought an EV last year, so my Subaru will probably be sitting in the carriage house for a while.

    Sounds like good stretching of ingredients. I'm also feeling smug. I'm very lazy in both shopping and cooking. I get a delivery once every 6 weeks or so of all the boring, repetitive stuff and everything else is bought weekly on foot. Our car, a hybrid, only goes out every few weeks.

    Using what's in the fridge, freezer, pantry and garden is second nature. I very rarely shop for a specific recipe.

    No it continues to go up. Closest gas station to us was 4..79 cash for unleaded. Happy I have a hybrid

    Gas has been pretty steady here after the initial spike up to around $2.99(cash or credit) from about $2.39 prior to the war's start 12 days ago. I topped off my tank on Monday for $2.95. I should be good to go for several weeks.

    arcy, just because you seem to believe anything you hear, doesn't mean others do. Here's a chart from a commodity economics site. Please tell me that our foolish adventure hasn't caused oil prices to climb to levels not seen in a long time.Prices are not "down" to levels of a few weeks ago.

    Prices are not "down" to levels of a few weeks ago. Where did Arcy say that prices were down to the levels of a few weeks ago?

    I usually have 3/4 of a tank at all times and top off if it goes below. I didn't top off until this past Monday after it had already gone up $0.60/gal.

    Answer the question and stop making stuff up!

    Diesel was over $5 a gallon yesterday where I am in the NE; a couple weeks ago was $3.49 when I filled up. Please don't take my question as snarky, I genuinely want to know: those who feel 'smug' with all electric or hybrid vehicles, what does it cost to charge up on your electric bill? Around here there is a big hew and cry over electric bill increases especially after smart meters were installed, although I haven't experienced it. Yet.

    I don't know all the details, but in some places the electric companies have to have price increases approved by government of some kind.

    Gas here jumped from $2.89 to $3.19 to $3.39/gal 3 days ago and never backed down, it is holding (today) at $3.39/gal. One more tanker gets hit and gas will take another hit too. Mining the straights won't help either. Talk of releasing oil reserves around the world will placate the situation, until it doesn't.

    I feel concern for people at lower income levels with tight budgets, who have to watch their spending on gas for transportation. And for whom increased fuel prices can become a big problem requiring spending sacrifices. Ironically, such people form a not-inconsequential portion of the current gang's support segment.

    Today’s fuel price situation reminded me of the two fuel crises in the 70’s because I remember the even / odd fuel up days. I looked up the specifics to remind myself. Copied here: ”The 1973 embargo was a response to U.S. support for Israel, while the 1979 crisis was triggered by the Iranian Revolution.” Seems like today’s participants are the same. Are we heading for the same result?

    Settle down...In June 2022 national gas price for unleaded averaged $5.02/gal. We are $1.40/gal less than that at the moment.

    That was due to a post-pandemic surge in demand and the invasion of Ukraine, which we didn't have control over. Now it's due to three crazy heads of state, two of whom were actually elected by their citizens for some ungodly reason.

    LoneJack - no need to tell me to settle down - I’m not in a panic over fuel costs. IMO we have bigger fish to fry in the things to be concerned about today.
