Comments (5)Anchos are a big componant of the chili powder that I make... 3 ancho chiles, stemmed, seeded and sliced 3 cascabel chiles, stemmed, seeded and sliced 3 dried arbol chiles, stemmed, seeded and sliced 2 tablespoons whole cumin seeds 2 tablespoons garlic powder 1 tablespoon dried oregano Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely. Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months. 1 teaspoon smoked paprika This is the original recipe (from Alton Brown on the Food Network). I usually triple it at least because it is such a chore to make, but I like having the chili powder around. Comments (11)DMF: Here's my casserole/lasagna concoction. I do a lot of my cooking by taste, so I'll do my best. The following is for a 13x9 pyrex dish. 1) Chop and saute 1 extra large or 2 medium brown onions, 1 small head of garlic, fresh chiles of your choice(jalapenos to superhots ;) ), 1 lg TB of dried MEXICAN oregano, 2 TB of fresh thyme(half, if dried), 2 tsp of cumin, salt and pepper - set aside. 2) Skin,debone and cut into 1 inch pieces 1 rotisserie chicken and mix(coat) with some red sauce(explained below). 3) Make batter. In a large bowl whisk together 1 12 0z can evaporated milk 8 eggs 1 TB baking powder 1 tsp. salt 4 TB flour 4) Construction- a) Grease(Oil) dish. b) Layer roasted, skinned and seeded green chiles, chicken mixture, saute mixture, red sauce and shredded cheese like you would lasagna. You'll need a lb of cheddar and Jack EACH - or Costco has a Mexican blend already shredded. about halfway through layering, pour about 1/3 of batter over that layer. Continue with layering until done then pour remaining batter over entire dish. c) Make sure your last layer is cheese for a nice toasty cheese top. Also, I like to sprinkle a tad of cilantro in - make sure it's not on top or it may burn. d) Bake at 350F for 45-50 min. Cover loosely with foil if it appears browning TOO much with time left on the clock. e) Let cool for 5-10 mins. Garnish with red sauce, sour cream, and cilantro. Note on red sauce: My red sauce/salsa is a separate recipe which I make large batches of consisting of tomatoes, chiles ( anaheims, jalapenos, serranos, reconstituted chiles de arboles and guajillos; and sometimes hotter varieties (habaneros et al)), onions, garlic, MEXICAN oregano, french thyme, cumin, cilantro, salt and pepper. Plus a little white vinegar and sugar. All veggies and aromatics are fire-roasted (tomatoes and chiles are skinned). Everything is then pureed, then simmered for about 30-60 minutes. If you don't feel like making this, I'm sure some canned enchilada sauce or store bought salsa fortified with some chiles would do in a pinch. Any questions, ask. Good luck. Comments (9)Jim, your recipe sounds similar to the one I have been making for many years. I beat a little flour into the egg yolks before folding in the egg whites. At one time it was hard to find fresh poblano chiles or Anaheim Chiles in Canada so I always used whole canned chilies. Home Cookin Chapter: Recipes From Thibeault's Table Chiles Rellenos =============== I have been making Chiles Rellenos for about 30 years. I have never had an actual recipe. I just watch someone I knew (from Texas) make them and have been making this way ever since. I guess now is as good a time as any to put it down on paper. 1 or 2 cans whole chili peppers (usually 3 or 4 in a can) Monteray jack cheese 2 or 3 eggs separated 1 tablespoon flour salt and pepper oil for frying Sauce. canned tomatoes onions garlic cayenne pepper canned of chopped chiles chicken broth . Cut cheese into finger size pieces. Carefully shove the cheese stick into a pepper being careful not to split it. Heat about 1 inch of oil in frying pan. Beat the egg whites until medium stiff peaks form. do not overbeat. Beat egg yolks with salt, pepper and the tablespoon on flour. Gently fold the whites into the yolk mixture. Dip the pepper stuffed with cheese into flour and then into the egg mixture. Carefully add to the oil. If needed, spoon a bit of the egg mixture on top of the pepper while in the pan. (these fry quickly), flip over and fry other side. Remove and drain on paper towels. Continue cooking until all of the peppers are cooked. Make sauce by sauting the onions and garlic, add the chopped tomatoes and season with the chiles, salt and pepper. Add some chicken broth and simmer for 20 minutes. Serve Chili Relleno with sauce on the side OR Place the fried chile rellenos in a casserole dish and pour the sauce over them.
