Photography next steps

I own a Canon EOS Rebel, one of the first versions ever. It has all the programmable buttons, where you sort of "point and shoot" using whatever button (portrait, micro, continuous shot...) you need.

This was long long before the current, actual, point and shoot cameras existed. I took it for granted. How do you get to step two... Did you take classes? A lot of trial and error?

I will buy the next version (thousands of dollars, so not right this moment) but I will.

I'm the meantime, I'd like to understand the ins and outs of what is going on; I want to figure out what it is it's going on internally (what the camera is doing).

What's the best way to go about it?
