Having the same issue in my bathroom adjacent to bedroom with a paint treatment I want to not have to redo. There is a leak going on that only happens when shower used. Luckily drained to unfinished area of basement. I will be cutting into drywall to do repair. No way would I mess with tile unless there was no other way. I am going to carefully cut drywall and when repairing hole have a access panel in case of future need. I will find something decorative to go over panel or a furniture piece, bookshelf or high dresser.

Wood thresholds are not acceptable on my builds. I have a good tile sub though, who I’ve worked with for many years. She runs one of the cleanest and most efficient sites around. Maybe your builder does not have a good tile person. Or he doesn’t know much about tiling. Unfortunately, you as a consumer are going to have to educate yourself, as this will turn into a contract dispute to get this redone the right way. Start at the Ceramic Tile Foundation, and read everything. Good luck!

You are correct. Only an idiot who did not read the instructions or take 10 mins to look at one of the many online videos would screw through the shower base. Also the Kerdi band and drain installation don't look very good and why has blue board been used in an area that will be constantly wet. Some people argue that it's ok as a base for sheet or topical membranes, but it is not approved in my area for use inside a shower, so just use cement board or better still one of the many waterproof tile backer boards now available.
