Comments (8)Jasdip, we just love that soup. So much flavor! This recipe makes delicious cookies, but makes about a gazillion. They are very soft and not browned except for a tiny bit on the bottom. I think I counted 9 dozen once but you can freeze part of the dough and use it later. SOUR CREAM SUGAR COOKIES 1-1/2 C. butter (3 sticks) 3 c. sugar 3 eggs 1 tsp. almond extract 1 c. sour cream 6 c. flour 1 tsp. baking soda 1-1/2 tsp. salt 1 Tbsp. baking powder Cream butter; add sugar gradually. Add eggs one at a time and mix well. Mix almond flavoring to the sour cream. Sift dry ingredients together. Add 1/2 flour mixture and 1/2 sour cream mixture to the butter, alternately and beat until smooth after each addition. Chill dough overnight. Roll in 1/2" thickness using only a small amount of dough each time. Cut into shapes with cookies cutters and bake cookies on a greased cookie sheet at 350 degrees for 5 minutes. Remove from pan immediately. Cool and glaze. Glaze: 1 c. powdered sugar 4 tsp. hot milk 1/2 tsp. vanilla Mix together. Add food coloring, if desired. Comments (9)Here's a meatloaf recipe using chipotle ketchup for a bit of kick. It makes a lot, so I'm going to cut it in half. Adelle's Meatloaf with Chipotle Ketchup 2 slices applewood smoked bacon, diced 1 small yellow onion, finely chopped 1 carrot, diced 1 celery stalk, diced 1 cup shiitake mushrooms, julienned 1/4 cup red pepper, diced 2 cloves garlic, minced 1 tablespoon fresh basil, chopped 1 tablespoon fresh thyme, chopped 1 1/2 pounds ground veal 1 1/2 pounds ground pork 1 1/2 pounds ground beef 2 eggs 2 tablespoons Worcestershire sauce 6 tablespoons plain ketchup 1 tablespoon Dijon mustard Salt and pepper to taste Chipotle ketchup 4 cups tomatoes, chopped 3/4 cup tomato paste 2 cups onion, chopped 1 green pepper, chopped in 1-inch pieces Canned chipotle peppers to taste 1 bay leaf 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice 1/4 teaspoon black pepper, ground 1/4 teaspoon cinnamon 1/4 teaspoon dry mustard 1 teaspoon garlic, minced 1/4 cup malt vinegar 1/4 cup brown sugar For the meatloaf: Heat oven to 350 degrees. Cook bacon in skillet just until fat melts; drain and cool. In separate pan sweat the onions, carrots, celery, mushrooms, red pepper and garlic until soft. Remove from heat; add fresh basil and thyme; cool. In large bowl combine veal, pork, beef, eggs, Worcestershire, plain ketchup, mustard, salt and pepper. Add bacon and vegetables and combine well. Divide mixture among two large loaf pans, cover with foil and bake 45 minutes. Remove foil and bake 15 minutes more. While the meatloaf bakes, prepare chipotle ketchup. For the ketchup: Combine tomatoes, tomato paste, onion, green pepper and chipotle pepper in saucepan. Bring to boil and simmer for about 30 minutes. Comments (15)My first thought was bet if might be great with sausage. I went searching after you posted the recipe and found this one. Yours and this one are close. 1 pkg. "JIFFY" Corn Muffin Mix 2 eggs 1/2 cup milk 2 cans (10 oz.) enchilada sauce 1/2 tsp. salt 2 Tbsp. diced onion dash pepper 1-1/2 lbs. ground beef 1 tsp. garlic powder 2-1/2 cups shredded Monterey Jack cheese -------------------------------------------------------------------------------- Preheat oven to 400� , grease 8" square pan. Blend corn muffin mix, 1 egg and milk until well mixed. Pour into prepared pan. Bake 20 minutes. Remove from oven, cool and crumble. Reduce oven to 350�. Combine cornbread, 1 egg, 1/2 cup enchilada sauce, salt, diced onion, pepper, ground beef and garlic powder, mix well. Shape into 1" balls and place in 13"x9" baking pan. Bake uncovered 35 minutes . Comments (97)No interesting cooking for people over here, but I’ve been cooking tasty food for dogs :-) We’re in Berkeley taking care of our friends’ very elderly and reportedly on his last legs little dog. I am, of course, determined that he will not expire on my watch, and when he eats enthusiastically I feel better. So, what to feed him? The base is a tasty homemade chicken stock, made from a roasted chicken, carrots, celery, onion - just like you’d make a chicken stock for yourself. We cook a batch of rice with that stock. Other chicken is browned then simmered, and minced up. His kibble is soaked in more stock. Then some more cooked chicken and carrots get pureed with stock into a sort of gravy-paste. Rice, kibble, and gravy are mixed, then briefly warmed in the microwave. Finally, crisp bacon is crumbled on top. I am pleased to say that Elderly Dog positively gobbles his food, cleaning his bowl reliably enough that I can give him his pills crushed in the food. I’d happily eat it myself, actually, except that there’s no salt or spice. Well, I don’t really like kibble. All the fixings are in stored in Tupperware so feeding doesn’t take long....See More
