Flooring advice for vacation home?

We are building a lake house in the Midwest which, initially, will just be a weekend get away. I was leaning heavily toward Stoneform flooring but while reading in depth on their website it says their product cannot be installed where temperatures go below 65°. That seems pretty warm to me! I wasn’t expecting to heat the house all winter at 65° while no one is there! After reading many temperature related problems with LVP in online reviews I’m wondering if we will run into this with any flooring and we just need to plan on paying heating bills for 2 houses all winter. Anyone have experience with LVP in a vacation home that is winterized? Or snowbirds who turn the heat down in their northern house for the winter? Would I face the same issue with engineered hardwood? TIA!
PS- We’re already drywalling so I’m very late making this decision! Every time I decide on a brand I read several terrible reviews that make me want to keep looking! Ugh.
