I had a mango tree when I lived in Venice (before moving to Westchester), and mine was a Manila mango. The fruit was smaller, yellow when ripe, and oval shaped, as opposed to round. I mostly made sorbet with them, which keeps well in the freezer.

Mango Pineapple Salad

One fresh pineapple cut into bite sized pieces.

About 2 cups of cut up mango.

A handful (about a quarter cup) of dried cranberries.

About a 1/4 cup of coconut flakes.

A sprinkle of fresh mint leaves (optional)

This would make around 4 servings. Double it for more.

You can cook with them, Mango upside down cake or mango Jam, or mango based barbeque sauce or put mango chunks in your curry, curry is good with sweets, I am fond of mango chunks with strawberry sauce as a summer dessert. Classic is mango chutney. Look on line for recipes. I would love a mango tree.

Mango salsa for white fish or shrimp is nice. I dice the mangoes, finely chop red onion and jalapeño, add salt and lemon or lime juice, cayenne is a nice jalapeño substitute.

Could be a Kent mango. Thai mango sticky rice.

this won’t useup a lot of mango but it is a very good recipe for a cool meal. Shrimp make a nice addition.

Zalco mentioned mango salsa. I’ve made this version many times. So good with the shrimp. I don’t add the brown sugar to the salsa.

When I lived in Manilla for a bit back in the early 90s I had several things made with both ripe and green Mangos. Mostly desserts but they also made sweet mango BBQ sauces that were really good on chicken and pork. I also really liked their pickled green mango spears called burong mangga in Tagalog.

Those look like the ones our neighbor has - they're huge, sweet and juicy, with very few fibers and ripen around this time of year. I think she said hers are Kiett? She's very generous, because she is often away, and lets us harvest as much as we like from her 2 trees.

I have a dehydrator and have used it for the overflow. Dried mango is very yummy and takes up a lot less space - I dip the slices in lime juice before laying them on the trays so they don't turn brown.

You can also peel and cut into chunks to freeze for smoothies, baking, etc. - I use plastic zip freezer bags.

I've also seen some folks put theirs by the curb in a box with a 'free' sign and some plastic shopping bags to carry them.
