Comments (4)Yes, I had brine left over from both batches of Bread & butter jalapenos/cowboy candy. It is undiluted vinegar, no water. Only spices and sugar are in the recipe in addition to the vinegar. I was hoping to use the leftover brine for making a batch of refrigerator peppers, but wasn't sure of the quality or taste. I also didn't know if I needed to simmer them in the brine before refrigerating, or just adding them to the brine in the refrigerator. Thanks for the reply. Comments (4)Hank, OK, below is a quicker, easier recipe for refrigerator cucumbers. Making crock pickles is a lost art, I think. I don't even have a pickle crock any more. I think that larger cucumbers make more watery, soggy pickles which is why most recipes call for pickling cucumbers of a certain size. Dawn REFRIGERATOR CUCUMBERS 4 cups of cucumbers, peeled and sliced thinly 1 medium sweet onion, like Texas 1015Y/Texas Supersweet or Vidalia 3/4 cup granulated sugar 3/4 tablespoon salt 1/2 teaspoon celery seed Place your thinly sliced onions in a bowl. Sprinkle with the salt. Place prepared cucumber slices in the bowl on top of the onions. Stir the two vegetables together. In a small bowl, whisk together the vinegar, sugar, and celery seeds. Comments (6)I do what cloud swift does. But dcarch's method of cutting on the "equator" stunned me. I never, ever thought of cutting a peach that way. I always cut from pole to pole, that is, from the stem end to the, um, other end. I will have to try cutting on the equator and see whether it makes a difference. John, if I understand you correctly about the "cheeks," that's how I cut apples when I haven't cored them. I cut the first slice off a side (avoiding the core area), and then proceed to cut several other sides. Some are round, and others are more rectangular. Then I take each piece and cut thin slices from it. When I'm done, most of the pieces look "slice-like," and if some don't, who cares! They still taste good.
