I love BM Simply White. I'm using it now on my exterior trim and will use it on all my interior trim as well. It's a nice, bright warm white. Regarding the sheen, BM paints (IMHO) seem to be shinier than other paints I've used. The "low luster" exterior that I'm using now actually has quite a bit of luster! I used the exterior "soft gloss/satin" on my front door and it actually looks more like a semi-gloss to me ... it's quite shiny. Personally, I would not want semi-gloss on my cabinets and would want something less shiny and reflective. While I might go with the painter's suggestion regarding the brand of paint to use (maybe he has better results with one over the other), I would want to choose the finish myself after looking at the different sheen levels on actual wood. samples. They had those at my BM dealer and they actually painted a couple of wood samples for me to bring home.

Also... When we finally got to adding the crown molding (about 6 months after the cabinets were painted) I had to go back to the paint store and have the existing paint color in the can matched to the aged paint on the cabinet. (and surprisingly, no, the trim isn't yellower than the cabinets now) This gives you an idea of the change. In fact the reason I chose Cloud White was I was having trouble deciding between it and a creamier white, but I took the aging factor into account and am very happy I did so.

Your cabinets are lovely, must you paint them? If you must, I agree with choosing something else first, such as the granite. If you're doing your backsplash too, perhaps go tile shopping. If you fall in love with something, it will help narrow down your paint choices. Easier to do it that way as paint choices are much larger than granite/ tile choices.

It is very hard to see colors on screens. That said, to me the far left sample looks the best. The other two seem a bit yellow on my screen and the countertop does not seem to have any yellow.
