I've been playing around with a white cake version of this for cupcakes. It's bake sale season around here and cupcakes are always a big seller. The problem I kept running into was texture. My 15 yr old said it tasted like cornbread, meaning a coarse texture. I ended up using cake flour and superfine sugar and that seemed to do the trick. The original recipe calls for all purpose flour so I got out my scale and weighed an equal amount of cake flour (125g/cup). I'm not sure on the substitution ratio in cups of cake flour for all- purpose. I also added in about 1/3 c of sprinkles to make them funfetti:) This is my version of the recipe Vegan Cupcakes from allrecipes. This is definitely not vegan anymore. 2c all purpose flour (I used 250g cake flour) 1 1/2 c buttermilk 1 c superfine sugar 2 t baking powder 1/2 t baking soda 1/2 t salt 1/2 c oil 1/2 t vanilla 1/2 t almond extract Preheat oven to 350�. Line 18 muffin cups with liners. In large bowl whisk together flour, sugar, baking powder, soda and salt. In separate bowl whisk together buttermilk, oil, and extracts. Pour into the dry ingredients and mix just until blended. Spoon into muffin cups and bake 15-20 minutes.

--Palm sugar is a low-glycemic sugar made from the sap of the Palmyra palm tree. It works like sugar in cooking and baking and has a caramel-like flavor, and is a tawny brown color. I order it on-line from several different places (currently using NAVITAS organic palm sugar). You might want to check with your health care professional before using this. I have several friends with diabetes who can't use Splenda (one friend ends up in the hospital each time she is unknowingly served Splenda) and use palm sugar in moderation without any problem. But each person is different. --Another sugar substitute I've been trying is SWERVE (made from Erythritol). This product is safe for diabetics. --Almond flour is made from ground almonds. It is high in protein (6 g. per 28 g. serving) and low in carbohydrates (6 g. per 28 g. serving). I purchase it in 5-pound bags from Honeyville Grain Farms (http://store.honeyvillegrain.com/blanchedalmondflour5lb.aspx), but I also sprout and dry whole almonds and grind my own in my little Wonder Mill, Jr., as well as using almond pulp leftover from homemade almond milk I make. I dry the pulp in the dehydrator or use it moist. I make cookies, crackers, and there is even a recipe for Almond Pulp Freezer Fudge I'm going to try. Check out Elana Amsterdam's web site (www.elanaspantry.com) for recipes using almond flour. I've about worn out her cookbook "The Gluten-Free Almond Flour Cookbook". She uses agave nectar in most of her recipes, and that's another low-glycemic sweetener you may want to check with your health care professional before using it. --Coconut Flour is a high fiber, low-carb, gluten-free alternative to wheat. You can find lots of recipes using it on-line and I love the book by Bruce Fife, N.D. "Cooking with Coconut Flour". Most of the recipes can be made with alternative sweeteners. Diabetes is rampant in hubby's family, so I work hard at making foods that will hopefully help prevent him from ever getting it. We don't do without our favorite goodies, I just make them with different ingredients. -Grainlady

I've been using it for several months. I get mine from Honeyville Grain, and have been very pleased with the product. I add it to all baked goods for a portion of the flour used, pasta/noodles, and add it to our morning smoothie. Still experimenting with it. I made a small batch of crackers with it plus freeze-dried corn and freeze-dried shredded cheddar cheese and spices (altering a recipe found in "Cookin' with Home Storage" by Peggy Layton). They were similar in taste to Cheez-Its. I recently posted this recipe in response to altering a recipe: (Hi-Maize) Cappuccino Muffins 1 c. whole wheat flour (pastry if available - spelt flour will also work) 3/4 c. Hi-Maize 1/4 c. flaxmeal 1/4 c. agave nectar 2-1/2 t. baking powder 1 t. cinnamon 1/2 t. salt 1 c. milk 2 T. instant coffee granules 2 T. coconut oil (melted) 1 egg (room temperature) 1 t. vanilla 1/4-1/2 c. mini chocolate chips Mix dry ingredients together. Mix wet ingredients together. Add liquid ingredients to dry ingredients, mixing (by hand) only until ingredients are incorporated. Add chocolate chips. Fill a 24-muffin mini-muffin pan, sprinkle lightly with cinnamon-sugar. Bake in a preheated 350°F oven for 11-13-minutes. If you don't use cinnamon sugar on the top, they can be dusted with powdered sugar (or cinnamon- powdered sugar) after they are baked. ----------------------------------------------------- I'm all about glycemic index and glycemic load in foods, so this ingredient works very well in that division. Great for satiety - no more "munchies". There's all kinds of science on the subject you might be interested in. Just Google - Science - hi-maize resistant starch. On the subject of soup....this is my favorite soup recipe....also from Pinterest. It calls for the breast of a rotisserie chicken....I use all the meat from the chicken. Chicken Tortilla Soup Author: Chris Scheuer Serves: 8-10 Ingredients Ingredients for the soup: 6 small corn tortillas 3 tablespoons extra virgin olive oil 1 large onion, finely diced 1 bunch green (spring) onions, finely sliced 1 ¼ cups finely chopped cilantro, about 1 medium size bunch* 6 medium cloves garlic, minced 1 tablespoon dried oregano 1 tablespoon cumin 2 teaspoons chili powder 2 teaspoons brown sugar 2 teaspoons sweet paprika 2 14½-ounce cans diced fire-roasted tomatoes (If you can't find the fire-roasted tomatoes, just use regular, canned diced tomatoes.) 10 cups low sodium chicken broth 6 cups shredded rotisserie chicken breast 2 tablespoons lime juice freshly ground black pepper 1 teaspoon kosher salt, more or less, to taste Ingredients for the crispy tortilla strips: 2 tablespoons extra virgin olive oil 6 small corn tortillas kosher salt Ingredients for the toppings: crispy tortilla strips thinly sliced green (spring) onions coarsely chopped cilantro diced avocado For the soup, stack the corn tortillas on top of each other. Cut pile in half. Cut each stack into ¼-inch thick strips, widthwise. In a large Dutch oven or heavy-duty soup pot, heat oil over medium heat. Add onion, green onions, cilantro, garlic, oregano, cumin, chili powder, brown sugar, paprika. Sauté for 8-10 minutes or until onions are translucent and tender. Add corn tortilla strips and sauté for another two minutes or until softened. Add tomatoes and broth and bring to a boil. Reduce to a simmer and cook, uncovered for 45 minutes, maintaining a steady simmer. (Tortilla strips should be melted into the broth by this point.) Add chicken and cook for another 5 minutes. Remove from heat and add lime juice. Taste and add a generous grind of freshly ground black pepper and salt as needed. Serve soup topped with tortilla strips, sliced green onion, chopped, fresh cilantro, diced avocado and lime wedges. For the crispy tortilla strips, preheat oven to 400˚F. Line a sheet pan with foil for easy clean up. Stack and cut tortillas in the same way as directed above in the soup recipe. Place strips on prepared sheet pan and drizzle with 1 tablespoon of olive oil. Sprinkle with ½ teaspoon kosher salt and toss lightly with your hands until all strips are coated with oil. Spread out, as much as possible, to a single layer. Bake for 10 minutes then remove from oven and toss with a spatula. Redistribute to an even layer and return to oven. Repeat until golden and crisp, a total baking time of 20-30 minutes. Notes Even if you don't like cilantro, don't skip it here. When it's sautéed, then simmered, it looses all the fresh cilantro taste but adds amazing flavor to the soup!
