Comments (13)how interesting that deborah started this thread today--thank you! there is a very small (and CRAMPED) oriental market not terribly far from us and we stopped there yesterday to look around and pick up a few things just unknown to us. it was fun! i'd never had any thai food until 2 years ago and there was a nice restaurant that had a very small buffet every day. pad thai and tom gai soup were always there and most of the other dishes changed daily. i LOVED that soup and when i spotted fresh lemon grass yesterday, decided i had to attempt making it. there are about a dozen recipes for it on the "food down under" website and they are pretty similar to the one deborah posted. having said that, i simply don't recall the taste of either something like ginger (as a sub for galangel) or chili peppers in it but guess i'd be wrong about that :) in any case, i have dried red pepper flakes, or sweet chili paste with garlic or chipotle peppers in adobe sauce that i can use (VERY sparingly in our household). anyone have any suggestions on which might work best in this recipe? and maureen--ex or no, those sound like really great memories to me! it must have been quite the adventure for all of you! Comments (8)I must have missed something. Are you teaching cooking classes or something? Anyway, I just made Ann T's bread pudding and it is fabulous. I also made the caramel sauce to go with it. We ate it for three days. Yummy. 5-6 slices of bread 1/2 cup butter 1 to 1-1/2 cups sugar 5 eggs 2 cups cream (or milk)(I use half and half) i tsp.vanilla pinch of salt ( I actually used 8 slices of sliced Italian loaf, which is smaller than standard bread. When I use more than 8 slices, it soaks up too much sauce and is rather dry) Cut crusts from bread and spread eachslice with butter. Then quarter the bread. Place bread buttered side up in oven proof dish. Beat the sugar and eggs together and thena add the cream, vanilla and salt. Pour over the bread and allow the bread to absorb. (May be refrigerated at this point and baked later). Sprinkle withsome white sugar and place dish into a pan of hot water. Bake in a 350 oven for 45 min to i hour until pudding is set and golden. Caramel Sauce 1 cup butter 1 cup sugar 1 cup brown sugar 1 cup cream pinch of salt 2 tsp vanilla Bring butter, white and brown sugars, and salt to boil and then simmer 3-4 minutes (I actually simmer close to 10 minutes). Remove from heat and add the vanilla. I serve all of this warm. It is very rich and very delicious. Comments (18)I use Julia's recipe for the most part, with my own changes (I use red wine, vermouth and brandy and part rich beef broth that is reduced by half), but I still deeply caramelize the onions. I have her book "The Way to Cook" and the recipe in there is a little different than the one Beth posted from her earlier book. Last time I made it, several months ago, the onions took almost two hours to caramelize to a walnut brown. I can post the recipe but it's not much different than others here. Ina Gartens French Onion is also excellent, one of the few I've seen that uses enough alcohol. Barefoot Contessa french onion Soup 2 1/2 lbs yellow onions, halved, and sliced 1/4-inch thick ( 8 cups) 1/4 lb unsalted butter 1 bay leaves 1/2 cup medium-dry sherry 1/2 cup brandy or 1/2 cup cognac 1 1/2 cups good dry white wine 4 cups beef stock 4 cups veal stock ( or just double up on the beef stock) 1 tablespoon kosher salt 1/2 teaspoon fresh ground white pepper freshly grated parmesan cheese ( or a cheese of your choice) Directions In a large stockpot on medium-high heat, saute the onions with the butter and bay leaf for 20 minutes, until the onions turn a rich golden brown color. Deglaze the pan with the sherry and brandy and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes. Add the beef and veal stocks plus salt and pepper. Eggs Benedict casserole 6 English muffins 10-12 ounces Canadian bacon (2 packages, or use diced ham) **I used diced ham 8 large eggs 2 cups reduced-fat milk (or whole milk) 1 teaspoon onion powder cooking spray 1/2 teaspoon paprika easy hollandaise sauce- (I just use package) How to make it -------------------------------------------------------------------------------- Cut muffins into 1/2-inch cubes. Set aside. Cut Canadian bacon into 1/2-inch squares. Set aside. Whisk the eggs well in a 2-quart bowl. Whisk in milk and onion powder. Spray a 9-by-13-inch glass or ceramic baking dish with cooking oil spray. Scatter half the Canadian bacon evenly in bottom of dish. Scatter muffin cubes on top of Canadian bacon. Top with the remaining Canadian bacon, scattering it evenly over the bread. Pour egg mixture over the casserole. Cover the dish with plastic wrap and refrigerate overnight, or at least 8 hours, to let bread absorb egg mixture. Preheat oven to 375 degrees F. Remove casserole from refrigerator and uncover it. Lightly sprinkle the paprika evenly over the top. Cover the casserole with foil and bake for 40 minutes. Remove dish from the oven, remove foil, return dish to the oven and continue to bake, uncovered, until the eggs are set and the bacon on top begins to crisp, about 20 minutes more. Remove the casserole from oven and let it stand 5 minutes before serving. To serve, cut casserole into squares and place them on plates.
