Comments (15)I just got done making my traditional turkey scrapple. I make it every time we have roast turkey. I've never been a fan of turkey soup, so years ago when a friends introduced me to this dish, I tried it and have been making it ever since. Simmer the carcass with herbs & spices for several hours, strain, pick off all the pieces of meat. I follow the recipe from the Alber's box for cornmeal mush but use the heavily seasoned turkey broth. Simmer everything until the cornmeal is quite thick and spoon into meatloaf pans. Let cool & chil overnight. Then in the morning, slice the scrapple, dredge in flour, and fry until crispy on both sides. I've served it with honey, maple syrup, leftover gravy, and even leftover cranberry sauce. It's one of our favorite breakfasts. Comments (10)Here are two that are easy & delicious. Makes a great side dish for almost any meal/event. 2 packages frozen, chopped spinach 4 T. butter 2 T. flour 2 T. chopped onion 1/2 c. evaportaed milk 1/2 t. garlic salt 1/2 t. celery salt 1/2 t. fresh ground black pepper 1 t. Worcestershire sauce 1/3 pound Jack pepper cheese,cut into small chunks Buttered Bread crumbs for the topping (optional) Cook spinish as directed and drain well, reserving 1/2 cup of the liquid. Melt the butter in a saucepan over low heat. Using a whisk, whisk in the flour until smooth making a light roux. Add the onion and cook until soft, but do not brown. Slowly add the milk and the reserved liquid, stirring constantly until smooth and thickened. Stir in the garlic salt, celery salt, pepper worcestershire and cheese, and continue stirring until sauce is smooth. Mix in the drained spinach. Pour into a casserole dish and top with the crumbs if you wish Bake in preheated oven until hot and bubbly, about 15-20 minutes. ANOTHER that is a bit quicker, and different, but also good. 4 packages chopped spinach, thawed, drained 1 can condensed cream of mushroom soup 1 t. garlic salt 1/2 cup milk 2 large eggs, beaten 1/4 stick butter, melted 3 T. Comments (2)I got this from a Bobby Flay program several years ago: 1 egg, beaten 1 cup ice cold water 2/3 cup flour beat the egg with the cold water, then add the flour. (you may add herbs or spices with the flour.) You may need more flour to get the right consistency. You want it to be thick enouugh to coat the back of a spoon. Keep the mixture very cold. Comments (2)Opps, I knew that I was forgetting something, i.e. a finely chopped jalapeño pepper. How could I forget the most important ingredient? OK, I don't have a recipe with measurements, because I "eye" it and just add what I have in the house. And regardless of what kind of seafood ceviche I make, i.e. fish, shrimp, scallops, or a mix of all of these, I like to put the seafood into the lime juice to let it marinade until it turns opaque. I then remove it from the lime juice and add finely chopped onion, finely chopped cilantro and finely chopped tomatoes to the lime juice and then add the marinated seafood.
