Comments (13)Here are two of my favorites: Chicken Tetrazzini â¢4 cups cooked diced chicken â¢salt and pepper â¢8 ounces spaghetti, cooked and drained â¢6 tablespoons butter â¢8 ounces sliced mushrooms â¢1/4 cup all-purpose flour â¢1 cup light cream or half-and-half â¢2 cups chicken broth â¢1/4 cup dry sherry â¢1/3 cup grated Parmesan cheese â¢ground sweet paprika, optional Heat the oven to 425ð. Butter a 2 1/2- to 3-quart baking dish. Cook spaghetti or noodles according to package directions. Meanwhile, in skillet, melt 2 tablespoons butter over medium-low heat; sauté sliced mushrooms until golden. In a saucepan, melt 1/4 cup butter; stir in flour, and 1/2 teaspoon salt. Stir until smooth; add chicken broth and cream. Cook, stirring, until sauce is thickened. Add chicken, cooked mushrooms, and sherry; heat through. Place noodles or spaghetti in a buttered baking dish; pour on sauce. Top with Parmesan cheese and sprinkle with paprika. Bake at 425ð for 15 to 20 minutes, until hot and bubbly. serves 8 Baked Ziti 1 pound dry ziti pasta 1 onion, chopped 1 pound lean ground beef 2 (26 ounce) jars spaghetti sauce or homemade sauce 6 ounces provolone cheese, sliced 1 1/2 cups sour cream 6 ounces mozzarella cheese, shredded 2 tablespoons grated Parmesan cheese Directions: 1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. 2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. 3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. 4. Sweet and Sour Stuffed Cabbage From Jane BrodyÂs "Good Food Book" 1 large head cabbage (2 or 3 pounds) 2 tablespoons butter 2 large onion, sliced 1 16-ounce can tomatoes with their juice, coarsely chopped salt, if desired, to taste ½ teaspoon freshly ground black pepper, divided beef bones, about 1 pound (optional) 1 pound very lean ground beef ¼ cup grated onion 3 tablespoons uncooked rice (white or brown) 3 tablespoons water 1 egg 2 cups (approximately) boiling broth 1/3 cup raisins ¼ cup fresh lemon juice ¼ to ½ cup honey, to taste 1. Boil cabbage in large pot of water, 5 to 10 min. When cool enough to handle, gently remove leaves. Reboil inner leaves, if necessary, to soften. Use just the tender, whitish leaves for rolling. Shred the tough outer leaves and small inner leaves for the sauce. 2. Melt butter in deep, heavy saucepan, Dutch oven or roasting pan. Add onions and brown lightly. Add tomatoes with juice, about ½ teaspoon salt, ¼ teaspoon of pepper, beef bones and shredded cabbage. Bring the mixture to a boil, reduce heat to low and cook uncovered about 30 min. 3. For cabbage, combine beef, grated onion, rice, water, egg, another ½ teaspoon salt and remaining ¼ teaspoon pepper. Place 1-1/2 to 3 tablespoons of meat mixture toward the stem of each leaf. Fold in the shorter sides, then roll from the stem to form a fairly tight, compact roll or "ball". 4. Add broth to sauce, mixing well. Add cabbage rolls to pan and cook slowly over low heat for 1-1/2 hours. 5. Add raisins, lemon juice and honey (start with ¼ cup and taste before adding more), distributing these ingredients as evenly as possible. Cook cabbage, uncovered, 30 min. longer. Comments (14)I love stuffed cabbage and use my mother's recipe which calls for sour salt. I LIKE THE idea of the deconstructed dish in the crockpot. I think I will try it next week. Comfort food. The forecast is calling for snow next week. I do not expect it to be a snow event. Today my grandsons are coming while their parents attend a fundraiser st the school. Comments (12)I use raw rice.....and certainly don't "stack them in a pot full of liquid"....my meat mixture is "damp" and there are enough tomatoes, onions and carrots in the pot to provide as much moisture as the rice needs.....also I cook my rolls about 4 hours....See More- 3 years ago
