Butternut Squash not quite ready, but a freeze might be coming..

What should I do? It's weird this year, I had one grow early and the rest grew late. It's supposed to be around 31F in town on Friday night, and I live north, in the country so it could be colder. I have no problems picking the older one, but what do I do about the smaller younger ones? I'm not good at taking risks with my garden produce. If I did pick the young ones now, and let them sit for awhile, might they be still sweet enough? I usually let mature ones sit for a month or so before I process them. Just not sure what to expect of the small ones.
