Sadly yes, I'm limited to water bath at this time. The plan was to buy a pressure canner and a dehydrator this summer but when my husband got laid off, those plans were canceled. In the past I've not had good luck making spaghetti sauce my kids would actually eat. The Chunky Basil one had such good reviews, I wanted to give it a shot. Since my freezers are full, I figured if I was going to practice, I wanted it to be a recipe I could can if it turned out well. I have a good sized garden (and since my parents own a greenhouse, they gave me the plants for free) as well as access to a local amish produce auction where stuff sells dirt cheap (a bushel of green bell peppers for chopping for $1.00, canning tomatoes for $4-6 a bushel, Onions for 20-25 cents a pound etc and my parents buy stuff there regularly and give me their extras in exchange for some of the stuff I can). I also have a good supply of lids I bought last year when stuff was clearanced out. Overall I'm not too worried if the Chunky Basil Sauce recipe doesn't taste as good as I hope. I can always use the extras up simply by dumping a jar in every time a make a batch of chili (my pot is 4 gallons so a quart can easily get lost in there), I just know I won't have $ to get regular wine anytime soon. And since I have virtually free supplies at hand to make it, I'm not out much besides my time if the cooking wine tastes funky. As long as I know the substitution is safe, I can use it up in one fashion or another. I just won't make more than 1 batch until we can test it out. Since we have spaghetti almost every Sunday since it's a supper quick meal to make after we get home for church, if I can find a suitable sauce, it will definitely help the wallet come this winter when I don't have access to so much produce. I got the salsa done today and if the kids behave well tomorrow I will be making the spaghetti sauce. I'll let you know how it turns out. Thanks again.

Holly-Kay, I'm not Annie, but have made plenty of tie-up curtains. Mine are usually wider than that, but I do have one in my first floor powder room now that is very simple and flat-ish. This is a heavy Thibaut fabric and it's lined. I had made this for my sister a few years ago, and she painted her bathroom this year and had me make another one, in her new colors. You can see that this is a tiny bit gathered, but I made it a few inches wide than the window. If you sew or know anyone who does, if you want a completely flat look, it would be easy to reduce the width of the one at Country Curtains. You do have to play with the tie-ups a bit to get the look you want, but if it isn't a full style, like mine below, it's easy. Hailey valance at Country Curtains

You mean how thick I slice it after it's smoked or cured? I usually cure/smoke the entire loin piece, here I get a whole loin that's a couple of feet long and a couple of inches wide and tall. I cut those into manageable pieces, maybe a foot, cure them and smoke them, then slice them on the slicer about 1/8 inch thick. That's a thickness that will cook quickly in the pan for breakfast without giving my eggs time to overcook, but it could be thicker or thinner, depending on how you want to use it. For the sake of anyone whom this might benefit, now or in the future, I wanted to note that this rose does amazingly well in Arkansas. After killing a "maiden" of it, I acquired an own root plant and potted it up for a year when I lived in Seattle. It was the only rose I brought with me to Arkansas (I pruned the heck out of the baby plant and basically bare rooted it, stuck it in a plastic bag, and took it in my carryon luggage. It sat recovering in a pot for probably half a year before I could plant it out. It grew pretty well straight away when I stuck it in the ground. Here is a picture of it in May of its second summer in the ground: And here it is in October of the same year: You can see that both the rose and the rosemary grew quite a bit over the summer. It is an outstanding plant -- almost no blemishes on the leaves, beautiful habit and foliage, prolific flowers that are beautifully fragrant, not thorny! I wish I could have taken it with me on my recent move back to Washington State. Alas, I'm also going to have to find another one soon (but first, I need a garden, lol!) Here are some more pictures.
