Rita __________________________________________________________ WOW, something I know how to do, Rita's right! This is very good and you can't get quicker unless you eat an apple! I use a jar of Heinz pork gravy and Pennsylvania Dutch brand noodles, I like these better than those light & fluffy brand noodles. Cut the gravy by one third with water or chicken stock, if you don't it becomes to thick and overpowering. Cut up the pork into pieces about 1/2 x 1/2 inch (it'll shrink). Don't salt or pepper, make this an individual thing. Put the thinned gravy and pork in a correct size sauce pan and slow simmer for about 35 minutes. Near the end use corn starch to thicken to what you like, spread over cooked noodles, S&P to taste. Comments (19)My DH loved the way this is prepared at an Italian restaurant we frequent, and I thought it must be simple to duplicate. Here's the photo from the restaurant version and then the one I made which tasted even better - guess I used more cream and maybe I poured on too much sauce for the photo. Turkey & Noodles in Curry Cream Sauce *********************************** 2 - 3 portions 1 lb turkey breast, cooked and cut into chunks butter - 1 heaping TBS flour - 1 heaping TBS milk - about 1 1/2 cups heavy cream - about 1 1/2 cups 1 chicken stock cube or spoonful of chicken bouillon mix 1 heaping TBS curry powder (I used Sharwoods's mild) fettuccini noodles for 2 - 3 servings fresh ground pepper butter 1) Put water on to boil for noodles. 2) If turkey is not already cooked, it can be done in microoven with 3 TBS water until just done 3) Melt butter in saucepan, take off stove and mix in flour to make a roux, gradually adding warmed milk a few drops at a time and stirring to keep smooth. 4) Put back on low heat and finish adding milk, then cream a little at a time and stirring. Crumble in chicken stock cube and curry powder. Stir to blend. 5) Add turkey chunks and heat gently, keeping warm while cooking noodles in pot of water. 6) Drain noodles, add butter and fresh ground black pepper. Pour sauce over noodles and mix. Serve on hot plates and add grated parmesan. Note: The Spanish and German chicken stock cubes and chicken sauce bases are excellent and quite different than the ones I saw in Canada. This dish tastes better than the version in the Italian restaurant and goes well with a nice crisp green salad. ******************************** I usually make a turkey curry at the end of our Christmas bird. The dressing and cranberry sauce as well as the gravy all goes with this. The recipe is taken from a Sharwood Curry Powder advert for chicken curry which I also make but here I substitute leftover turkey. TURKEY CURRY **************** Serves 4. 1 apple, peeled and chopped 1 onion, chopped 2 TBS oil 2 TBS curry powder 1 level TBS flour 15 fluid oz (scant 2 cups) stock (boil turkey bones to make stock) 1 TBS chutney (I use Sharwoods Mango Chutney) 1/4 to 1/3 cup (60 grams) sultana raisins 8 oz (225 grams) diced turkey (include different sized small pieces from the leftovers on the turkey platter) salt 1) Fry chopped apple and onion together in 2 TBS oil. Add curry powder and flour. Fry gentry 1 minute. 2) Blend in the stock, bring to boil. Add 1 TBS chutney and the raisins. Simmer, covered - 30 minutes. 3) Add turkey pieces to the sauce, season with salt and simmer very gently 10 - 15 minutes more. If you have some leftover turkey gravy - that also goes well added into the curry sauce. 4) Serve over rice and pass around cranberry sauce, warmed turkey dressing, mango chutney and chopped walnuts. Comments (22)For one or two people it's often difficult to make a meal that is "just enough". I like the idea of cook once, eat twice or more. It makes sense both on time and energy savings. Many things taste better the second day. There's times I made a turkey breast and a meatloaf at the same time. (Two Nescos, no waiting! Or is it Nescoes?) Then had leftovers for a week or so. Freeze some, alternate days, make other things and not a lot of labor saved a lot of labor down the road. I have a cousin who claims to not eat leftovers. Personally I think it's another attention-grabbing tactic. Fact is, I've seen him eat leftovers a lot! I don't understand the aversion to it. Perhaps there are some who weren't able to prepare or have leftovers prepared to be tasty. But that's just an issue of education. Some can't cook a first-time meal that is palatable, but I digress. I wish someone who truly won't eat leftovers can explain why. I'd really like to understand the reasoning. The one point is there are many dishes (that assumably the "Leftover Defamation League" WILL eat) are actually "leftovers" by definition. Stuffing/dressing comes to mind. So do pot pies. Shredded or "pulled" meats are actually leftovers when you consider you cook it, then cool it, prep it and heat it. "Twice baked" potatoes. Lasagna would technically be a "leftover". Any prepared food (frozen entrees, etc) reheated is a "leftover". The list goes on. A lot of foods you get in a restaurant would qualify as "leftovers" since it's pre-cooked and reheated or re-served. Wanna get technical? If you go back for "seconds" on any meal, it's technically "leftovers"! So 'splain it to me Lucy! Inquiring minds want to know! This reminded me of a story back in my youth-er days. We were having some leftovers. Ma had heated up some leftover mashed potatoes, and my dad goes Wow, for some reason the mashed potatoes are always so much hotter when heated up than when first made! I had to chuckle. Uh Dad, think about it. Mashed potatoes come out of boiling water. Temp? 212°F +/-. Leftover going into the cast iron pan and heated can be what, 300° or ??? Comments (39)Nope. And I'm thrilled! As you may remember, my mom has quit eating or taking her medications, and we three children went to talk to her face to face. We made like we came to see her because she wasn't at church, and we came to say hi. It surely was to find out the severity. She was in bed asleep. Only one glass, no dishes, no trash, the mail still piled up, only Tuesday meds taken. Sigh. Mom got out of bed to to see us. As sister and i were situating her doctors appointments, rarely seen bro was talking to her, along with his girlfriend and two kids, she must've thought someone said something about pizza. Undoubtedly she misheard something. The girlfriends kids latched onto that and said pizza I want pizza! I jokingly popped up in the room about that time and said pizza I want pizza! She was on board with eating pizza, so we ate pizza. I handed her a small stack of mail for her to go through that looked important, and her pile of medications. She took the medications and went through the mail. if she said she wanted to wait 3 hours and eat pizza later on, I would have done it. I think we all would have. It was good to see her eat!
