30-32" stainless single bowl kitchen sink - offset vs center drain?

Hi. We're about to get new countertops and a new kitchen sink, replacing a double bowl one with a single bowl. We really like the idea of the offset drain so that we can still use the disposal even when large pans are in the sink to be washed. However, I've read various reviews of Elkay, Franke, Kraus, Blanco, etc., for this model and a lot of people seem to complain that the pitch isn't steep enough for water and food to drain properly. Is this the typical experience or do people find the offset drains fine? Plus I read different things about the quality differences between these brands as far as rust, scratching, staining, etc. I'm getting overwhelmed and don't know what do do. Input and real world experience would be helpful. Thanks.
