Annie's salsa mix...big hit
Comments (159)I agree with Dave. If there is any doubt about whether you added the vinegar, into the fridge it goes, it cannot be canned safely without it. I pressure canned the first batches, but my ultimate goal was to make a salsa that was safe to waterbath can. So, although I am/was confident in using the pressure canned version, it was not tested and declared safe like the water bath version was, and even that had some vinegar in it. Better safe than sorry, I'd definitely refrigerate the stuff and use it up, or freeze it. I know someone did that, but I'll be darned if I remember who. And you certainly can use the food processor to chop up the vegetables. I do mine by hand because I can't seem to get nice sized pieces. Either it's puree or the pieces are too big, and my knife skills are pretty good, so I just chop 'em. Manic, I'm glad you like it! Annie...See MoreAnnies salsa sorry
Comments (33)Which way do you prefer your salsa? BWB or pressure canned? Thanks springschel! :) We prefer to pressure can our salsa. Several reasons. First because we have several pressure canners and usually have one of them going at the time needed so it is convenience and we also prefer the resulting texture, not to mention the added safety aspects wife and I prefer. But it is just a matter of personal taste mostly. Good for you! getting the PC. It opens a whole new world of canning. Next thing you know you'll have more than 1 of them going at the same time just like us. ;) growinidaho - several have posted in the past that they eat so much of it while making it per the recipe that little is left over for canning. ;) We always make sure there is at least 1/2 a jar extra left in the pot for fresh eating. It never makes it to the jar though. You can make it with all frozen ingredients but you might want to drain it a bit more as the thawed veggies will be soupier. Comments (49)DH says: I am totally overwhelmed with the huge response! I so appreciate all your thoughts and well wishes. Love the mug and the cake, even with a piece missing. All I know is Annie spends a lot of time on the computer and I never know what she's doing. It drives me nuts. It's such a wonderful surprise to find out that she is interacting with such terrific and considerate people. Thank you again for all of the kind wishes. Here's to the next 75! P.S. to all of you who think she's wonderful to live with...not so much ;)...See MoreNeed advice about an invitation to my DH that did not include me.
Comments (145)It sounds to me like someone checked off the names they wanted in Outlook or a similar contact manager and paid no attention at all to how the names were said or if there would be a question as to whether it meant plus spouses, plus children, etc. Not so much lacking in etiquette as utterly clueless about how to make a guest list in the first place. Anne, good for you for sticking with the notion that these are good friends even when feelings were being hurt. There are a heck of a lot of clueless people in the world and it would be a lonely place if we dumped all of them just for one thoughtless gaff. As to gifts, thinking along the lines of Littlebug's joke, how about a home organizer kit? If they're combining two households, plus wedding gifts, they probably have a lot of stuff, some of it valuable. A home organizer kit, with one of those engraving pens for marking electronics, ledgers (spreadsheets) for insureables, pouches for receipts, a binder for insurance policies, bank documents, trust papers, etc., a file box for instruction manuals, plus things like note paper to write the stories of heirlooms on, colorful stickers, maybe even a garage sale kit, could also help them learn to be organized. :) Or you can get them something as random as the invitation. Go to a china shop or department store with a good return policy for bridal and get the most interesting looking random thing in your price range. Maybe a glass and silver pickle jar or a strange art glass vase....See MoreAnnie Deighnaugh
