Encapsulate/emboss the existing sheet vinyl, with a product like ARDEX SD-F. It may take two skincoats to get it smooth enough for the tiles to bond and not cause plasticizer migration. Prime the floor, pop your lines and spread your clear spread and let it sit for about 45 minute to an hour before laying your first tile. Pressing on the spread adhesive, it should be very tacky, but not transfer to your finger. Put the tiles in unflashed adhesive, and you will have continued glue ooze(black crud coming from the seams), for the life of that floor.

A good quality sheet vinyl can give you the look you're after with the ease of maintenance that comes with this type of flooring product today. There are lots of selections out there that will surely last twenty years in even the roughest household, provided that whatever you get is swept and cleaned regularly and the proper furniture glides are provided for all movable furniture pieces. The crown you feel through the existing floor should be easy for a competent and experienced flooring installer to address. The key to successful and long-lasting sheet vinyl installations is preparation to the existing floor surface; failure to do proper preparation or installing over an unapproved substrate can result in a floor that will have problems. Also important is the use of approved fillers, adhesives and seam sealers. It isn't rocket science, but you have to cover all bases and the job cannot be rushed; a competent, trained and experienced installer will know this. Armstrong, Mannington and Congoleum are just three manufacturers and distributors of quality vinyl and 'vinyl-type' sheet products. Remember that generally you will get what you pay for, so if your selection is low on the price point scale, overall quality is apt to be low as well. You're doing good research. When you're finally ready to pull the trigger, you'll be an expert.

To prevent self-leveling compound from chipping, flaking and cracking (as long as there is no movement), just use self-leveling primer. It's very inexpensive and should never be over looked, when pouring self-leveling compound. If, you are pouring on a slab, shouldn't be an issue. Weight is the big concern with self-leveling compound. You can screed up to 1" thick at once, depending on your tooling (spike roller). If, you are pouring 3" thick, no screeding is necessary, the product will self-level. Putting in a wooden sub-floor would cost less than pouring 3" thick of self leveling compound.

I have to find my calipers to verify, but I believe that the vinyl sheet thickness is 1.5 to 2 mm thick. We already have the LVP stacked and ready to lay down and this was an unexpected hiccup.
