Comments (23)Lars - Do you mean a Mexican market? We have a "super mercado" in town. They do have good pork and even beef that I've bought. I've never seen a ham but, I could check it out again. Otherwise, I'll look for a Smithfield. Thanks everyone for your input. I guess I've never officially introduced myself because I've been posting with the GW since 1996 when things were much simpler. Then, I became a Master Gardener in 2000 and that occupied most of my time. Now, I'm retired from MG having Emeritus status. I have 5 grandkids now with two more on the way - one in July and another in Sept. And they all live close, one next door! Comes over for breakfast most mornings with her two since she's still on maternity leave I met lindaC. at some of the Chgo. GW get-togethers and often wonder if any of the others are still around. If they are - they are probably in flowers somewhere. There are just too many forums nowadays. lindaC - do you know if Cora Lea or any of the others are still around? Comments (15)Here's a tomato and ham pie that I make every 4th of July We've had it for breakfast, it also makes a nice dinner. Ham and Tomato Pie Ingredients 1 (8-oz.) package diced cooked ham 1/2 cup sliced green onions (about 4 onions) 1 (9-inch) frozen unbaked pie shell 1 tablespoon Dijon mustard 1 cup (4 oz.) shredded mozzarella cheese, divided 2 medium plum tomatoes, thinly sliced 1 large egg 1/3 cup half-and-half 1 tablespoon chopped fresh basil 1/8 teaspoon pepper Garnishes: fresh basil sprigs, tomato slices Preparation 1. Sauté ham and green onions in a large nonstick skillet over medium heat 5 minutes or until ham is brown and any liquid evaporates. 2. Brush bottom of pie shell evenly with mustard; sprinkle with 1/2 cup mozzarella cheese. Spoon ham mixture evenly over cheese, and top with single layer of sliced tomatoes. 3. Beat egg and half-and-half with a fork until blended; pour over tomatoes. Sprinkle evenly with basil, pepper, and remaining 1/2 cup cheese. 4. Bake on lowest oven rack at 425° for 20 to 23 minutes or until lightly browned and set. Cool on a wire rack 20 minutes. Cut into wedges to serve; garnish, if desired. Comments (23)Much depends on how you like your ham and how fussy you are about it. Thin sliced ham, cooked a long time will dry out. Heat releases the juices so it naturally will dry. Some like it that way. This is why most recommend room temp or just 10 min or so to heat it. 10-12 min per pound? Wow. That's a long time it seems. This is why I don't usually like spiral cut hams. Every time someone made one that I've had they baked it like a solid ham and it was nearly ham jerky. I also prefer a thicker slice of meat than the spiral thickness so that's another reason I wouldn't get it, but for convenience for a sandwich buffet or something I could see it. I think I'd cut the meat from the bone and put it in the electric roaster, seal it with foil and let it warm a short while. Possibly add some ham juice if it came with it or maybe something like 7up, ginger ale or preferably a low-sodium broth for a more natural and less sugary flavor. I like ham, not sugar-frosted ham flakes. Most important caution if you're heating it, seal it up tight. That'll keep the moisture in. And you're right, there's hundreds of different ideas how to "cook" it and the debate rages whether to cook it. Comments (26)Last Christmas when my family was visiting, my brother wanted to pay for the ham, but since he was flying in he couldn't actually bring it with him. He suggested ordering and picking up a Honey Baked (TM) Ham, but upon checking I found that the local store had closed and the next closest was about an hours drive away. Even though the price wasn't an issue (since he'd be paying) , I still couldn't bring myself to pay $80 for a ham. The local store had a special on Boar's Head Sweet Slice Ham for about $4.99 a pound, but didn't have any large ones left. I saw that they also had the same ham on offer at the deli (for $6.99 / lb sliced), and got an 8 pound ham (IIRC) and then managed to convince the manager to sell it to me whole at the lower advertised whole ham price. The ham is as good or better than the Honey Baked one I had had in the past. I only baked it enough to warm it through and made a glaze/sauce from a jar of habenero pepper jelly and some other ingredients....See More- 4 years ago
