Is this a good idea or stupid?

I thought I was all set for Seder with some guidance from a previous thread, for our small Seder meal. I was going to make shortribs and vegetables with a spicy romesco. But the cousin around whom I planned this menu doesn't seem to be arriving in time, after all, and his brother's family is off on a very public interaction spring break from which they won't be home long enough to incubate anything they might have caught. Since there will be a number of very elderly, they've thoughtfully bowed out. And I don't think the elders are as big on red meat as those who aren't coming (though they'll eat anything), and I've been suffering from lack of enthusiasm. Usually, I have dozens and make both red meat and a turkey, but I can't face a turkey.

My new idea is to braise brisket--which everyone loves, but maybe put the root vegetables right in the pan. And add in some chicken! But, of course, I don't want to worry about the raw chicken, and don't want the chicken to get gummy. I've been reading up on chicken braises and they're usually done in a hotter pan. So I thought I could sous vide the chicken and then just finish it in the braise. I'll be cooking in not-my-kitchen, with limited oven space and I don't want to be dragging around too many of my own pots, or I'd just do the chicken separately.

What do you all think?
