Sometimes it's the color that matters

I love it when the farm has "interesting" vegetables. This week it was chioggia beets. They're kind of variegated, with super long bitter stalks and lovely, tasty big leaves. I roasted them whole, peeled and cut the roots into wands, and kept the crackly leaves separate (the stalks were way too bitter for me to figure out a use for, and I put them in the compost). Another interesting root was purple daikon. One of those (they're about a third the size of the white daikon in the stores) became matchsticks to mix with the beets. Drizzled right before eating with a (bottle bought through the same farm) citrus chipotle vinaigrette, it makes a beautiful and tasty salad.

Two of the beets were more red heart and rim with the rest white than red and white striped, and the striped one was a lot more red than white, but all had the same mild flavor, neither so sweet, nor so beety as red beets. The daikon was beautifully striated lavender. So they do clash, but more jazz than discord, especially with the orangey-beige dressing. Very different looking. :)

The daikon is peppery, but not particularly hot. The dressing is lightly bright and vinaigrette-tasting, with just a back note of heat. They go well with the delicate flavor of the beets. I don't know if I'll ever be able to recreate this, but it's really good. And pretty, if a little challenging, to look at.
