The $%^& Parfait (semi-update)

Some time ago, I posted about a parfait I’m making for tomorrow’s cookbook club luncheon. https://www.houzz.com/discussions/6236757/how-far-ahead-can-this-parfait-be-made#n=17 My question was how far ahead can I make this. My answer is ”not far enough.”

This morning I made the crumble. It is oats (rolled and steel-cut), pecans, and pumpkin seeds. All of that is folded into beaten egg whites flavored with cayenne, ground fennel, sugar, and salt. Add to that neutral oil and Worcestershire sauce. The instructions say to whip the egg whites until foamy then add all the other ingredients and beat until stiff peaks form. [may I yell here?] YOU CANNOT DO THAT!! Stiff peaks will not form after you add the oil. I read the instructions until I was blue. Having said that, the crumble was not as weird as I thought it was going to be. It is actually pretty tasty.

Not wanting to get ahead of myself, I waited until mid-afternoon to start on the elements of the parfait. The first layer is a sort of blueberry jam. It went well, but not quickly. I think it would have been better without the lime zest. Then it had to chill for an hour and a half.

The next step was the buttermilk panna cotta. The cookbook author admonishes you to strain the mixture because it will curdle. Nope. No curdling. I strained it, nevertheless. It is very thin. I cannot do the lime curd layer until the panna cotta has set up. I’m hoping the panna cotta sets up. The gelatin to liquid ratios seem to be okay compared to other recipes I found. It is 1/2 envelope of gelatin (I weighed it to get exactly half) to 3/4 cup cream and 1 2/3 cup buttermilk.

I’m tired. I think i have a disaster on my hands. I’m going to make the lime curd in the morning so that the panna cotta has sufficient time to set up. If it doesn’t set up, I’ll serve the lime curd and whipped cream on the side and call it ”deconstructed parfait.” 😉

@plllog, remember how you were concerned about the parfaits taking up odors in the fridge and I told you I never cooked anything stinky? Guess what I did today? Boiled eggs! OMG. I had to double bag them to control the smell. I did discover a simple way to cover the parfaits…cookie sheet turned over on them!
