Leveling floor for luxury vinyl plank?

This is a single floor home of about 2.8k sq ft. on a concrete slab.

We want to put vinyl flooring on all the house. About 40% of the house has tile and the rest carpet.

Ideally we’d be able to get rid of the carpet and the tile to level the floor, but according to the contractor it would be too much work and it would be too messy to get rid of the tile. One of the concerns is the kitchen island that would need to be removed together with the dishwasher just to remove the tile under it. He has some concerns about the bathrooms as well, especially the toilets. I wish we could move to a different place while the floor is installed, but unfortunately that’s not an option.

The contractor’s suggestion is to get rid of the carpet and keep the tile, use backerboard together with customblend thinset and acrylic mortadella admix to level the floor.

Has anyone had experience with something like this?

Would it work?
