Which kind of dry peas are used for growing Asian pea shoots?

You know the pea shoot tips that are sold in Chinese grocery stores? I just love them and for the first time I think I will be able to grow them. (Also, I have not been able to go to ChinaTown for ages).


Are there a specific type of pea that these greens are grown from?

I am fine with that but I am just wondering if traditionally a certain kind of pea is used that gives the tenderness and lovely flavor?


These may or may not be the same as the 'micro green' pea shoots that are so popular now. I have not tasted microgreen pea shoots.


I do have a whole pound of Johnny's Select Seeds Sugar Snap Peas (dry). Would these work well for shoots?
