Grout for 12 X 24 matte porcelain floor tile with 1/4 spacing

My husband and I have just finished installing tile in our mudroom. We have chosen 12 X 24 porcelain tile that is matte and mimics slate (it is very dark gray). We thought we had chosen the grout - MAPEI ultra color flex - premixed. But after doing some research, I am very concerned about hazing that we may not be able to get off. I have read that it can stain matte tile??? Would a grout release solve this problem? I have also read that the trick to avoiding hazing is to wipe it right away - but others have said that it takes a long time for the grout to set and if it is wiped too soon, you will pull the grout out. Is this just the wrong type of grout to use on this project. It is a large room (300 square feet) and we are beginners...although the tile went down great. We wanted to go with a premixed grout because we wanted it to be consistent. Thank you for any advice you can offer.
