All wood naturally changes color over time. Ambering is natural for maple. You can not orevent that. If you want wood that does not change color, you want thermofoil or laminate faux wood.

I am in the process of putting them (with slab doors) in my small kitchen. I am having a cabinet maker custom make them and suspect that they will eventually start to yellow a bit. They will stay lighter than many other woods but aren't going to be a whiteish tone.

I just had natural maple cabs installed and I love them. The sample of the door style I chose was exposed to strong morning light for many years at my cabinet maker’s location. The door sample was indeed yellowed but honestly I totally fell in love with the aged wood and won’t mind one bit if mine weather that way.

You either like and appreciate wood and its qualities or you don't. Wood will not be same, the lighter you go the more variation you see. Scandi look often uses lime wash for the wood so yo might want to look into that.
