LED lighting for the bathroom??

We're redoing our master bath (90 ft2) and are planning on 5 ceiling lights (toilet, bath, shower, 1 over each sink) and 2 side lights at vanity.

I've been looking at LED lights and am confused.

I believe we want 3000k dimmable lamps? I was planning on them all to be the same (waterproof - IP67 for over the shower) for consistency. Many seem to not need a 'can' mounted in the ceiling. Many seem to come with a transformer to transform from 120v. I believe I want ceiling cans providing 120v. What is the best code compliant option? I looked at alternatives at Lowes and there was no clear direction there either.

I'm tempted to avoid LED because of the lack of a clear direction.

Is this the right way to go? There are so many alternatives it seems difficult to choose the best/correct option.
