Chicken Scarpariello

I made this recipe yesterday, after being inspired by watching it being made on ATK.


Somehow it looked better on TV than it turned out. If I make it again, I will not sauté the vegetables more than a minute or two, as they seemed overcooked and mushy in the final dish.

The main substitution I made was that I used chicken thighs instead of a whole chicken, and so perhaps this recipe is better made with white meat.

I also substituted celery leaves for the parsley, since I did not have parsley, but I did already have all of the other ingredients on hand when I saw this on TV and was pondering what to do with the package of chicken thighs that I had bought. I used four thighs, which together weighed 2.3 pounds, and so I made 2/3 or 3/4 of the recipe. I also added a couple of Serrano chilies, and it still tasted too mild for me, and so next time I will add a chile de arbol.

This recipe is fairly similar to the way I make Chicken Cacciatore, which I think I like better.

Have you made this recipe or something similar? I served mine with potatoes because I had some that were already cooked, but I will serve the leftovers with rice.
