Fried green tomato advice?

I'm pretty happy with the recipe, salt and pepper cornmeal and browned in bacon fat. Since I don't have any bacon, at least I sort of got to have a b and t, without the l. I had a somewhat light green tomato, which is what it said to use online, and a mostly green tomato with a bit of red in it. What is in between those? Because the light green tomato while being firm, lacked any tomato flavor, and the barely red one is just too soft. I feel like Goldilocks! What experience have you had with it successful fried green tomato, that you'd like to impart?
