Coconut frozen fruit bars?

I love all things coconut. I could sip coconut milk right from the can.

I used to buy coconut frozen fruit bars at Aldi, but I haven't found them there in about two years. I believe it was a latin brand. They were creamy, rich, and intensely coconut.

I know Outshine makes one, but they are nowhere near as good.

Anyone have a really good recipe? I don't want pineapple or any other fruit in them - just coconut.

Google and searches on recipe websites can't distinguish between FROZEN coconut bars and coconut bar COOKIES, so I've weeded through a lot without finding anything that seems right.

Do you expert cooks have recipes you recommend? Thanks!

Try searching for paletas de coco. What you describe sounds like what Mexican pushcart vendors sell.

Here's a recipe I made up for coconut ice cream:

1 can (18 oz) coconut cream

1-1/2 cups heavy cream

1/2 cup coconut milk

2/3 cup sugar

2 tbsp Amaretto

Combine all ingredients in a blender and process until smooth. Chill the mixture, if the coconut cream has not already been chilled, and the process in your ice cream maker.

Yield: 2 quarts (?)

You could add coconut flakes to it, if you want.

I'm sure you're aware of the difference between coconut cream and coconut milk. I do not use any coconut water in this recipe, as it would be too thin.

Mangosteen from the can are edible but nothing like the original fruit. I think the two best fruits that seem to hold their texture and quality in the can is probably rambutan and longans. I bought can guanabana once, ughhh, I highly recommend anyone to stay away from it. Looked like a can of oysters with boogers, absurdly sweet and fibrous, you can lose your appetite by tasting one. I have yet to find frozen guanabana, would like to try one though.

Frozen stuff always tastes less sweet than warmer things... I think I would whirr some sugar in a blender so as to make it really fine ( not powdered sugar as that has anti caking stuff) and then add some to taste to the processed fruit....and don't forget to add some lemon juice...just because. I just made another batch of peach jam....I keep giving it away as fast as I make it! LOL! Gotta have some for the winter! Linda C

DD's latest favorite breakfast is me making her a PB grilled sandwich. Butter one side each of 2 slices of bread (we like honey wheat) Stick the 2 buttered sides together so you can spread PB on the exposed plain side of one slice. Put that slice on the griddle butter side down and sprinkle chocolate chips on the PB which is facing up. Add the other slice on top butter side up and grill like a grilled cheese. DD doesn't like bananas but I bet it would be great to add banana slices!!

I've never used a recipe for fruit pops. I puree frozen raspberries with plain non-fat yogurt (How much? Until it seemed the right color and texture), a small amount of sugar (maybe 1/4 cup for a pound of raspberries) and enough water to make it pourable. I've been known to throw in shredded carrot, which appalled my daughter (elementary age at the time) when I told her until she tried one, and then she declared that I should always add carrot. I don't see any reason why you couldn't substitute coconut milk for part of the yogurt.
