I have no clue I would need to see a to scale floor plan of how the new spaces are going to be and this is too early to be deciding counters or anything else that is part of decor. Get the cabinets decided and that floor plan posted then worry about the counters

The question is once the window is removed, should the granite go through to create seating on the other side.

I like this idea. I would open the area as wide and high as it can go. We widened our opening in our Florida home and just a few inches here and there make a difference. The other side of ours was a counter, but we decided to not utilize a counter there because space was tight and we needed space for a dining table.

Would be nice but is the sunroom heated/ac as it looks like it a seasonal room

^^My concern as well. Is that sunroom too hot/ too cold depending on the time of year?

As far as counter seating on the sunroom side? I don't see it as getting used as such. More likely it would gather clutter. Least ways that would happen in my house. :-)

What will function better for you? A counter, or furniture? Looking custom or expensive takes a back seat to what will function better IMO- I've been in and seen very expensive custom kitchens that don't function well and so to me weren't worth the extra cost.

do you need all the extra seating? you have peninsula and a dining table right there. do you need the overhang w/seats too?

how is the window going to be done? just like it is? or is most of that wall coming down?

I would remove the wall and add an island instead. I agree with the above that using this peninsula for seating may end up getting cluttered. And possibly looking make shift.

Total seated for gatherings? Is casual ok having a counter in the dining?

Will it be "used" liked more than a console storage, buffet?

Is this what is meant - a non-stop counter with 1 slab?

Ok, the one slab thing does look neat. But still, function. Do you need the additional few stools seating like that more, or would you benefit more from the storage of a buffet? If you don't need the seating so much, you could still do the one slab and put some custom cabinetry in on the dining room side. Make it more dining buffet looking rather than a kitchen cabinet. Maybe even something extra like glass doors like some old build ins have. The one slab would look like a stone top for the buffet then.

Indoor/outdoor slab can't be done later -- so, could an informal table be placed just under outdoor counter, probably at twice depth of counter [so it can be used].

If a room that in the future could change purpose, change furniture -- use 2 slabs so the outer could then be removed.
