Eliminating Juniper Ground Cover

I have a large bed of Juniper that the previous owners planted, and I don’t really like the way it looks. I’d like to take out the Juniper and “update” this area, but I am not very good with gardening, and I have NO idea what I could plant in this area! It’s pretty large and sloped. My mom suggested some plants such as Swing Low Distylium, but I don’t know what else to plant here or what layout would work with a sloped bed this big. I’m also unsure of what to use for the ground covering - mulch, pine straw, rocks (??) to use. This area gets sun in the morning, but only for 4-5 hours and then it’s pretty shaded.
