Hiding electrical wiring in a log cabin

I've purchased a log cabin and doing some minor remodeling to the bathrooms. I bought new overhead sconces and framed mirrors for over each sink in dual vanities. When I did a walk through with the contractor, I noticed there was a visible "groove" or chase for the electrical wiring from the sconce and down behind the mirror. There was another visible section of the chase between the mirror and vanity. The contractor's project manager refused to patch the visible sections saying she was worried about it being a hazard and wouldn't know what would be safe to use. She suggested we take down our new mirrors and replace them with a wall to wall mirror that would cover the chases, then mount the sconces on top of the mirror. Although. that might look nice, it's another expense and hassle. Any suggestions about patching the visible channels?
