Tweaking old-school shrimp orleans recipe

Link below is to an exact copy of an mid century recipe my mom put into a community cookbook. It's for a dish called "Shrimp Orleans." Includes ketchup, cream of mushroom soup, sour cream and canned mushrooms. I've made it as is with the recipe, it's way too salty for us. I want to remake it, using real sauteed mushrooms and a white sauce, and I'm thinking adding some cajun seasoned home canned tomatoes. Just not sure on how to make the white sauce and how much, if I'm adding what is basically home canned diced tomatoes. They are runny . . . Also not sure if the sour cream is needed on top of that. I think a cup of sour cream is a little excessive.
