Is it common to put extra slabs on hold for countertops?

Our fabricator has asked me to put an extra slab on hold for each of the areas of our new build. She says it will take 2 slabs for our kitchen, but to put 3 on hold “just in case”. I think it is a super smart idea and totally agree that better safe than sorry...... but there are only 2 slabs available of the stone I want for the kitchen. I know I need to move on and find an altenative, but I was just wondering if that is common to put an extra slab on hold?
