Honed Quartzite - Sealing

Hi everyone!

We went to a slab yard last week and picked 2 slabs of honed quartzite in “Negresco”. These will be used for a waterfall kitchen island.

My question is: if we seal it will the color change or stay as is?
We originally didn’t want to deal it, however after telling our fabricator that the slabs was showing finger prints when we touched it (from hand moisture) he is insisting that this may not be quartzite and that the stone is too porous and will most definitely get stained if we don’t seal it (oil stains).

I don’t mind sealing it but I am concerned about how the color will change... and our fabricator says that it most likely will look like when it’s wet. The sales person at the slab yard insists that this is quartzite and that the color will not change if we use a “non enhancing” sealer, which I don’t know what it is.. they are not able to give us a sample to test it either.

I’ve attached some photos below of the slab when dried and with water applied on it.
At this stage I’m not sure what to do, any help would be grandly appreciated!!!
