I'd consider a pale green. That works with the roof and also with your interior colors. I would not go more brown if that is not working for you already. BTW - I painted our wood siding and love the results. It had been an awful worn brown color and I painted it lavender because I could not stand it for another day. It took a ton of primer and paint to do, but the results were awesome. I know I'll either repaint later or use siding, but for now and for the coming years, it works so well. Our house went from ugly to cottage-y which is what I as trying to accomplish. When choosing the color, I wanted something that was not available as siding because with paint, you can choose exactly the color you want and are not tied to the siding mfr's palette. It would go more mainstream if we ever side it down the line. I suggest using quality paint and primer so it lasts longer before needing to be repainted. Here are the before pix (shown a few years before painting, was more worn looking) and the current look at sunset, with my cell phone, so not accurate as to the color. It is much more subtle a lavender shade where it even appears white until you notice the white trim and bricks.

If the paint is that thick and uneven, the shingles wont lie snug and flat and fit back together right. Unless you were to take them all to a dip and strip place and have the paint removed? Hmmm. That would involve some time and expense and still might not all fit back together well. The wood might be very fragile and dried out (easily broken) after 100 yrs. The act of drilling/sawing/prying off would release some lead dust although not as much as sanding.. Extremely time consuming - might as well re-shingle.... imho As an old house fan myself I appreciate that you want to keep the character of the house, How much square footage is this? Why not try some ready-strip or soy gel and experiment in an area - thats a safe way to remove paint cos it all remains in the gel and isnt airborne. You dont need to take all the paint off, just enough to even it out. It doenst need to be perfect. Or try the zinsser thick peel stop formula (a heavy bodied primer that sorta evens out the surface) - Ive not tried it but it looks kinda interesting.

I'm looking for a rustic look with light airy colors for the kitchen, bedroom, and bathrooms. I want the colors to flow. I like neutral and white colors. Please help!

Talkto a real estate agent to see if you'll get your money back. It's not clear to me wht soil you have to plant in. A white house with a green lawn, as in your inspo pic looks nice. A whitee house in a sea of white gravel/dirt/concrete as in your top pic, not so much. Equally, from what I see,you have some nice plantings in the places where you can put them. I strongly recommend you find some lndscaping ideas that are a better match for your house and climate, because from what I see, you're not going to achieve anything much like tht pic.
