using a paring knife

I have recently noticed that I am preferring many times to cut vegetables while holding in my hand and with a paring knife, as opposed to a cutting board and all the mess.

I find that, as simple becomes my preferred way of life, that I also like my vegetables cut into rustic shapes and sizes.

Of course, not all vegetables lend themselves to this type of prep. It is hard to cut and hold a tomato like that.

I have noticed that some old world kinds of cooks will do just about everything with one knife and a lot in the hands. Many will use a rather large sharp knife that looks pretty versatile for a lot of things.


I have a chefs knife, a wide bladed serrated knife and a paring knife and I am convinced that I could do anything that I want to do with just those three knifes. I know I can, because I really do. The only one that I might add is a filet knife of some type.

I know that some spend much on knives and cutting equipment and will swear by it. But, I wanted to share the simple pleasure that I have found with a much more relaxed expectation.

Does anyone else like to use the paring knife like this? I am finding a real preference for doing it like this.

It seems as if the word "simple" is dominating my life now. When the world around is crumbling into a heap of social rubble and decayed democracy, I find much solace in simplicity.
