I had this same dilemma and ended up going with silgranite. The white wouldn’t have worked as well in our color scheme and the silgranite was a better option budget-wise. I’m so very happy with my decision. I had originally ruled silgranite out thinking it looked too modern, too cold, etc., but it’s actually really lovely. Ours is a Blanco. We’ve had it since last September and so far I have zero complaints. Cleans up beautifully, completely functional, and (I think) looks great. I know this was not your question :) Just throwing a third option out for you. Feel free to disregard!

I just installed this gorgeous Ricotta Elkay Quartz Luxe sink for a customer, so I can't testify to it's performance yet. I wouldn't have installed it if I thought I would get a callback. I replace a lot of cast iron sinks, black and white.

I have had both and I like both. Nothing beats stainless for ability to take abuse. I currently have a Whitehaus fireclay farmhouse style and I love it. It's big and deep and looks great with my hickory cabinets. I have a stainless rubber-footed grid on the bottom so pots and pans and dishes don't rest directly on the sink bottom.

So, I think it really comes down to what material and style of sink is going to look better in your kitchen.
