Sink Installation: 1/2" or 7/8" sink flange underlap to stone counter?

After following @Joseph Corlett, LLC's expert advice on sink installation in other threads--specifically those recommending a 1/8" positive reveal--I have a question for him and/or anyone else who might want to weigh in. I have an apron-front sink with a 1" perimeter flange. 3 cm soapstone will be the countertop. It is a workstation sink with a single interior ledge. Can I safely have the soapstone-to-sink-flange overlap be only 1/2" for a remaining 1/2" reveal instead of the recommended 1/8" reveal? My thought is to use the extra reveal as another ledge for additional cutting boards. If it's risky to reduce my seal by that much, I'll be plenty happy with the traditional 1/8" positive reveal, but I wanted to explore all options. Photos:
