Marble or quartz for kitchen counters?

I'm replacing my kitchen counters. I have granite now and love its practicality. But I can't find a new granite/stone that works, colour-wise. The colour range is basically creamy white to light beige. So it's either marble or quartz. I know all the pros and cons of both and I'm still on the fence. If I go with marble it will be honed (and sealed). Here's my dilemma: I do a lot of baking and I love being able to put the pans right on the counter. That favours marble. But I also make salad every day and often cut up lemons and oranges - using a board - and there are always drips onto the counter - so that favours quartz. So it might come down to this: acidic spills on the marble - do they etch instantly or do I have a few seconds to clean up spills? Same with grease: Does it stain on contact or can I wipe the counter clean after the frying is done? Despite what everyone says, can I actually put hot pans on quartz or will it discolour and/or break down immediately?
