@LynnNM only curbside pickup available here so we celebrated at home. I made pork carnitas, Mexican street corn, guac and chips and Margaritas. Sunday we could have sat on the patio and drank Margaritas, but not today. Spring is fickle in Wisconsin.

Yes, we did! It’s our DD’s birthday, and she is quarantining with us. We had Chuy’s curbside and margaritas.

Our street had an informal cocktail party at five pm in the cul de sac. Everybody brought lawn chairs (or stadium chairs I think they’re called now) or drove up on golf carts. We drank and chatted for an hour and a half, It was delightful to have conversations with people I don’t know very well and to discuss the community news. Rumor has it that our golf course is changing hands, and we were all speculating about it. The board of directors plan to reopen our outside amenities in two to three weeks, including tennis, pickle ball, bocce, the softball field, dog parks and maybe the outside pool. There will be many rules and restrictions but everyone is excited. We managed to stay the proscribed distance apart and enjoyed ourselves immensely.

I live in Michigan and we have always celebrated Cinco de Mayo. I didn't realize people in the southwest thought otherwise. We are under Stay at home orders so we made our yummy Mexican celebration at home this year. Yours looks great!

Hi Amy Lynn! I was born and raised in Mt.Clemens, Michigan. My family and friends never celebrated it there back then, so I wasn’t sure who was celebrating. Enjoy!

We got married on cinco de mayo but it took us a long time to realize the significance of the date! Today we celebrated 30 (!) years. We are supposed to be in Italy ☹️ so we ordered delivery from a nice Italian restaurant and had a romantic dinner with our DD while watching the virtual athletic award ceremony at her school on a laptop.

We also donned our hazmat suits and went to a local garden shop earlier and bought some shrubs and other plants, which really did seem like an adventure since I have only been to grocery stores in the last 6 weeks!

Thank you Lynn, and happy evening to you too. We did celebrate tonight - Washington state. We would normally have joined friends at our favorite Mexican restaurant but did their pick-up dinners to take home instead. Just the two of us.

We both ate like it had been something gourmet, each of us raving about our meal. This was the first time we've had something one of us hasn't cooked since March 7 when we had a family lunch at that very restaurant. Clearly we've missed even occasional meals out ;0)

As I was cleaning up after we'd eaten, DH was eyeing the leftovers and said, hmmmm. We have chips, salsa and pico de gallo, some of the refried beans and there is cheese in the refrigerator. I can make us nachos for lunch tomorrow ;0)

We celebrate! But I was too late to order from our favorite restaurant--they're heavily supported locally and stopped taking orders before noon. Good for them. I cooked at home, and we simply noted the date. I came across a really good, fresh margarita recipe but I don't have the ingredients on hand. I'll postpone my toast until I do. In the meantime, Lynn, I hope you enjoyed yours.

It dawned on me late this afternoon that it was Cinco de Mayo. I had everything on hand for tacos so that’s what we had, sans chips, salsa and margaritas.

LynnNM, hello fellow Michigander! I am surprised nobody celebrated when you lived here. Maybe it comes down to the area or crowd you are in? It looks like you certainly know how to celebrate now though :) Your festive spread looks amazing and I hope your feast was delicious!

We also celebrated, but in a very minor way. Brought in Mexican food and made margaritas. We usually meet up with friends for dinner, a big group with friends and all our grown-up kids.

I don’t think many in the US celebrated Cinco de Mayo before Mexican themed restaurants became widespread. The first Mexican restaurant, that I remember, opening up in Tampa was in the early 70s. It was many years later that celebrating Cinco de Mayo became popular. I’m all for any fun holiday!

We celebrated with a healthy chicken taco salad (sans taco to keep it low carb) and yummy margaritas without sugar. Just one knocked me on my arse! Yours looks lovely Lynn.

Normally when I make Margaritas for myself, I use Cointreau, but I don't have any here, and so I had to use Triple Sec, which I normally reserve for Tequila Sunrises. I found I don't really like Triple Sec in Margaritas, and so I will look for Cointreau the next time I have a chance.

I agree Lars, Cointreau is an essential part of a margarita. Tequila, Cointreau and freshly squeezed lime juice is a classic margarita.

I made enchiladas, and we had refried beans and rice along with the obligatory margarita (with Cointreau). We listened to some lovely guitar music and altogether had a festive dinner. It was nice to mark the day, and maybe this way I'll be able to remember dates for the rest of this week, anyway.

How wonderful that so many of you celebrate this fun holiday! When we married and moved out here to New Mexico 37 years ago, I was in heaven with all the truly great food . . . not to mention the wonderful history of New Mexico, it’s beautiful art and architecture, the people, and the views (among so many things). My new good friend, Jeannette, took me under her wing and taught me how to cook “like a local” and not “like a gringo”. I’ve treasured and used the cookbook that she made for me ever since. She and her DH own a very well known, historic hotel and restaurant here in Northern New Mexico. And we’re still very close friends. How amazing that this Michigan Girl ended up living here in this wonderful Land of Enchantment so many years ago! But, I consider it a true blessing. If you’re not very familiar with my beautiful, magical adopted state, please take the time someday to ‘look us up’. We're a hidden jewel very worth getting to know.
