Complicated backsplash question

So, we are doing a partial remodel of our kitchen damaged by a plumbing leak.

I'd like to get some advice on our backsplash. As you can see from the pics the range hood/chimney sits kind of off by itself (the cooktop will be underneath it, but it isn't installed yet). We like the idea of creating an accent wall on the wall with the oven cabinets using the wood plank in the picture (it is the flooring from the living area next to the kitchen). I don't want to run the wood plank behind the range since we cook a lot and I don't think it will hold up. Right now we are thinking about tiling behind the cooktop and blending it into the accent wall, then taking the tile around the rest of the kitchen. The granite counters go all the way around. (we have an octagon shaped kitchen)

2 Questions:

1. What tile would you use? Open to any suggestion, but prefer to keep it light.

2. How high up the wall would you tile behind the vent hood chimney?
