How can one determine the level of the perched water in a container?

I have seen numerous diagrams showing perched water in various shaped containers. How did they arrive at those diagrams? How did they know where the perched water is? I suppose one can scoop out layers of soil mix at different heights within the container and weigh them, then subtract the weight of the dry soil mix to determine the amount of water present. Is this how it is done? Is this the only method?

Also, is the amount of water in the soil mix continuous or discontinuous? In other words, as you go down the container, is there a point you can say, "Aha, this is where the perched water starts"?
